Tabouleh
Middle Eastern Food

Tabouleh is a salad mostly eaten in the Arab world. This is a popular dish in the middeteranean cuisine. In Lebanon this is considered as their national Lebanese salad. This can be eaten in many ways - as a salad, sandwich (pita), or with roasted chicken. I love this salad!

Tabouleh

1 cup chopped parsley (washed properly)
1 medium onion, chopped
2 tbsp. fresh mint, chopped
1 cup diced tomatoes
1/2 cup bulgur (cracked wheat)
1 cup boiling water
1/2 cup lemon juice
1 tsp. salt
sprinkle of black pepper

Procedure:
Place bulgur in a bowl, pour water to cover it completely, let it soak for 15 minutes. (You can also soak in cold water but it has to be soaked for 2 hours to become soft). Drain and squeeze water from burgul using hands.

Mix together the chopped parsely, chopped tomatoes and add them to burghul.Add lemon juice, chopped onions, salt, black pepper and mix well. Then add the olive oil and toss gently. Put in a dish line with lettuce and garnish on top with sliced bell pepper.
Refrigerate for 2 hours. Serve cold
