Sitting Chicken

If you are tired of eating fried, baked or barbecued chicken, Try this recipe for a change.
This is a Filipino dish that I haven't cooked for many years now. It was simply disregarded and completely forgotten in my recipe box. This morning as I was dusting and sorting out my files, I found this recipe tucked in a cookbook.. (A friend of mine handed this recipe 10 years ago).There is a traditional way of cooking this chicken (without water, just let the chicken sit on the bed of salt and steam it) but I am scared that this will burn my chicken so I prefer my recipe with 7-up.
Pinau-pong Manok (Sitting Chicken)
Ingredients:
1 whole chicken
1 bottle 7-up or sprite (about 2 cups)
1 pc. onion, chopped
1 bay leaf
2 cloves garlic, chopped
5 pcs. whole peppercorn
3 pcs. calamansi or 2 tbsp. lemon juice
1 pc. chicken bouillon cube
1/2 cup margarine
3 tbsp. soy sauce or more for a darker sauce
1 tsp. salt.
Note: additional water to cover the chicken while boiling
[B]Procedure:
In a deep casserole, boil chicken with 7-up, onions, lemon juice, chicken cube, margarine and salt, add enough water to cover the chicken. Cook in medium fire until chicken is tender. Cook for about 1 hour for a kilo of chicken. Open casserole and check if there is enough water to cook the chicken, adding water if necessary. Remove chicken and put it on a shallow platter.

You have to use a deep saucepan because the chicken should be completely submerged in the sauce mixture and cover it completely. Once it starts boiling, lower the heat and let it simmer till cooked.

yes, 7-up make this dish sweeter (not really sweet because there is water mixed in it) and this is the main ingredient that makes the difference.
I have another recipe for the chicken using BEER but it's a different method. Maybe I'll post it here next time.
