Molded Crab Meat Salad
January 8th 2008 05:03
During the first week of 2008, one of my new year resolutions is to clean-up and organize my cookbooks collection. Hmmm. I got this idea to try to post some retro recipes from my vintage collections. I love looking at the old pictures. Here's one sample copied from The Blender Way to Better Cooking year 1965.
1 envelope (1 tbsp) unflavored gelatin
1/4 cup cold water
1/2 pint dairy sour cream
3 tbsp vinegar
1 cup cooked crab meat
1 cup pared cucumber, cut into 1-inch cubes
1/4 small onion
Sprinke gelatin over cold water; let stand until moistened. Place over boilng water and stir to dissolve gelatin. Punt in blender conainer with sour cream, vinegar and salt; cover and run on speed (low) about 30 sec.
Add crab meat, cucumber and onion; cover and run just until veggies are chopped. Pour into a 1-quart mold; chill unitl firm. Unmold and garnish with cucumber and radish slices.
Note: I substituted the crabs with shrimps.
I'll post some more next time...
