This is an easy dish to prepare and would be a great appetizer in a party.

Cheese Fritters
Ingredients:

1 3/4 cups all purpose flour
1 pound mozzarella cheese, shredded

2 eggs, beaten
4 tbsp. chives, chopped
dash of pepper
dash of salt
1/4 cup cornstarch
Oil for deep-frying

Procedure:
Mix 1 cup flour with the cheese, eggs, chives, pepper and salt. Shape the mixture into 24 balls. Combine the remaining four with cornstarch and roll the balls into the mixture, coating lightly.
Heat oil and deep fry the fritters in small batches until they rise to the surface, turning the balls if necessary. Fry until golden brown. Drain on paper towels. Serve warm.
